Using Abante as an email order option only

Is it possible to replace the payment gateway with an email order system only? And if so, how do I go about it?

I assume, by "an email order system only" you mean order online and you like to process payment later offline. Is this correct?

I know this extension "offline credit card processing" does something similar to what you need.
