Hello,
I don´t want to install german and spanish as an extension
but want to upload package to the shop using ftp. Where can
I download the german and spanish language packages ?

Spanish language is already inside the abantecart admin -> extensions -> languages
German you can get on the marketplace.
If you want FTP to extensions directory yourself, you can Download extension archive in account -> downloads

but hey in the end, you can´t find any better web shop!
I´m impressed by Design => Layouts and Design => Blocks
You can reshape your website from within the Admin !!

Don´t use bloated and SLOW ExtJS and similar slow bloatware.
Please, please, please keep it fast with low level jquery/html
and hard core access to the engine, keys, templates and more
editable blocks with html source.

I am not sure what you call SLOW ExtJS. AbanteCart storefront is very fast and light/optimized for JavaScript usage.
As for admin UI. There is an area for improvement, but the trick to preserve flexibility.
Generally, it is not good idea to hard code. Unless you give an example, I am not clear what you mean.

Very good example where ExtJS showed up as bloatware:

modx evo had a fast backend without ExtJS, but the new modx revo
has a slow backend because of implemented ExtJS.
Many users moved frustrated away from modx revo
because of that.
