If I was in your shoes, I'd delete the current setup and just reload everything and load the demo data as well. See if that stuff shows up correctly at all. It's really hard to debug without looking at it directly to see what maybe causing the issue.
Having ran into numerous problems in my own setup, my general thoughts on all this is if only I am complaining about it, then it's probably just my environment and something is out of whack. Could be simple, hard, just impossible to say and starting from scratch is my advice.
That said, I've rebuilt, reloaded this app 10-20 times easy...since I break stuff and don't know what I did (more often when I was learning a bit more)...
Sorry I don't have a better answer, but as the environment is new and you aren't live yet, it's good to know what's causing this NOW vs. when you are online already and this happens again.
At least get a baseline sorta working, then tweak what you have.
