How do I remove the Visa/MasterCard logo and only display Paypal?

You can do this 2 diferent ways

Edit template code in file  storefront/view/default_html5/template/blocks/credit_cards.tpl
Or
In admin create new HTML block with paypal or other payment icons in Design -> Blocks section.
Now you need to add this block in the footer for each page in Design -> Layout section
