when a customer completes the contact page, I am able to receive the information and details, however it does not show the customers email address.
the email address I receive has my own email in the from & to section.
is there a way to have the customers email address included in the mail message?

Reply To in the email sent to configured store owner email should be customers email.
You can also apply this fix to show customer email/name in the email body:
