Title: Modify Category Menu

I'm sire this is easy and I am just overlooking it ... where do I change the category menu links?

Category menu is built dynamically based on your categories. If you add/remove or enable/disable categories, it will be reflected in the category menu. Sames applies to category sorting.   

If you need to edit the rest of menus, this is done in Design -> Menu
