1. Install without demo data
2. Go to each sections and delete all the data that you do not need.

Go to Admin-Catalog-Products you can select all or few products in the grid. Then in the bottom right corner select 'Choose Action->Delete selected' click Go and confirm delete action
Same for Categories or Manufacturers or Global attributes.... etc
