I am trying to update things here and change the language to Indonesian. As you can see in the pictures, there is a Indo value and an English value. Everytime we send an email to a customer, it keeps arriving in English. We have also been having problems where we change the wording and then it just changes back to the original text we just changed automatically. I also made both the Indo and English values in Indo lang, but the email still appears in English. I have included pics of everything to see. If anyone knows what I am doing wrong, please help. Thank you, I do appreciate the help!

what version of AbanteCart do you use?
By approach customer will gets email in language of order. Another words we get language code from order data and build email. You can try to switch language on storefront side and then create order.

We are using the current version, 1.2.2. I have English turned off and Indo turned on for my language options. I created a new order and then sent the email again and its still all in English. Im stumped on how to get this to work.

You turned off english only for interface. But engine still use it as base for missing definitions.
You can not to disable it totally.
Try to delete language cookie for your domain and check what value was set after page reload.
Also you can try to enable setting "Warn for missing language text" to ON in menu->system->settings->details and check error log
