Title: I want to show multiple types of stock status without blocking sales

I can see that I can prevent ordering when out of stock, but I want to let people know if it's in stock with the supplier or what the ETA might be or Pre-Order things that are about to come out. Is there currently a way to do this?

I don't think there is a clean way to do this.  For a pre-order, you can put Pre-Order in the title of the item and let them pay and buy it, but it's not perfectly clean.

For ETA, I change my Out of Stock message to the ETA date for that particular item.
