Does anyone know where the sign up information goes when a user signs up for the newsletter? Also how do I approve users?

Hello.
You can find  in Admin > Sales > Customers > Select 'Newsletter' group at the top and apply http://docs.abantecart.com/pages/customers/search.html

Also you can send main or SMS to your Newsletter subscribers in Admin > Sales > Send Mail http://docs.abantecart.com/pages/customers/send_mails.html
