Can a column with the "last updated" timestamp for products be added to index.php?rt=catalog/product?

Yes, but my use case is that I need to see the time it was last updated. Products may be updated by import a few times per day, and I want to see the time of the last update. And I want to do that without having to open every single product in the list.

Yes, this is technically possible. AbanteCart already stores the product's last-modified date and time, and standard product imports update this value, so no database changes are needed. A code change or extension would be required to display it as column in the Products grid.
